Any good ideas on spicing up my ground turkey dish?

I am trying to create a recipe for dinner tonight using Ground Turkey, Cheddar Cheese, Lasagna Noodles, Spinach, Onions, Garlic, and Carrots. I am going to be making a type of lasagna roll up and am looking for suggestions of spices to add. I don't think I should go with the traditional basil and parsley used in a lasagna recipe because I almost want this to have a mexican flair since I am using cheddar instead of ricotta and mozzarella. Any suggestions????
